๐Ÿช Best Chocolate Chip Cookies Ever

Nothing else needs to be said. The title says it all.

Ingredients

  • 1 cup Unsalted butter,
  • 1 cup Packed Brown Sugar
  • 1/2 cup White Sugar
  • 1 Egg
  • 1 tbsp Vanilla Extract
  • 1/4 tsp Almond Extract
  • 1/2 cup (125g) Sourdough Discard
  • 2 1/3 cup All Purpose Flour
  • 3/4 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Cinnamon
  • 1 1/2 cup Chocolate Chips (mixed)
  • 1/2 cup Chopped Pecans

Instructions

  1. Brown and lightly cool the butter
  2. Cream brown butter and sugars
  3. Add egg + yolk, vanilla and almond extracts, mix till glossy/pale
  4. Add discard and mix thoroughly until fully incorporated
  5. Whisk all dry ingredients in a separate bowl
  6. Add all the dry ingredients to wet, and mix until just combined with a spatula
  7. Fold in chocolate chips and pecans into dough
  8. Cover and chill for at least 2 hours, up to 72 hours
  9. Bake cookies for 10-12 minutes at 350*F
  10. If baking from frozen (pre roll dough) add extra 1-2 minutes
  11. Cool on baking sheet for 5 minutes, add extra chocolate chips on top while cooling, move to cool completely on wire rack after
  12. Store in airtight container for up to 5 days on countertop
