Light, fresh tasting, and makes you feel good! Great for when it's cold outside or you're sick.

Ingredients

  • Olive Oil
  • 1 Lemon
  • 2 Egg Yolks
  • Garlic
  • 2 Chicken Breasts or 4-5 Bone in Skinless Chicken Thighs
  • 1.5L of Chicken Broth
  • 3/4 cup of Rice or Orzo
  • 1-2 Large Carrots
  • 3-4 Stalks of Celery
  • 1 Large Onion
  • Better than Buillion
  • Oregano
  • Rosemary
  • Chili Flakes
  • Salt and Pepper
  • Bay Leaves

Instructions

  1. Make the soup base with the veggies. Cook for 8-10 min
  2. Add in the garlic. Cook for 1 min
  3. Add in bay leaves, spices, chicken, better than buillion, and broth and get to a boil
  4. Reduce heat and simmer for 15min
  5. Take chicken out and shread
  6. Add rice/orzo in and cover. Cook for 15 min
  7. In bowl, mix egg yolks with lemon
  8. Temper the egg/lemon mixture with 1-2 ladles of the soup
  9. Mix the mixture into the soup and continue to cook for 5 min
  10. Season with salt/pepper
  11. Add fresh parsley and serve maybe even with a lemon wedge
