π¬π·π Greek Lemon Chicken Soup

Light, fresh tasting, and makes you feel good! Great for when it's cold outside or you're sick.
Ingredients
- Olive Oil
- 1 Lemon
- 2 Egg Yolks
- Garlic
- 2 Chicken Breasts or 4-5 Bone in Skinless Chicken Thighs
- 1.5L of Chicken Broth
- 3/4 cup of Rice or Orzo
- 1-2 Large Carrots
- 3-4 Stalks of Celery
- 1 Large Onion
- Better than Buillion
- Oregano
- Rosemary
- Chili Flakes
- Salt and Pepper
- Bay Leaves
Instructions
- Make the soup base with the veggies. Cook for 8-10 min
- Add in the garlic. Cook for 1 min
- Add in bay leaves, spices, chicken, better than buillion, and broth and get to a boil
- Reduce heat and simmer for 15min
- Take chicken out and shread
- Add rice/orzo in and cover. Cook for 15 min
- In bowl, mix egg yolks with lemon
- Temper the egg/lemon mixture with 1-2 ladles of the soup
- Mix the mixture into the soup and continue to cook for 5 min
- Season with salt/pepper
- Add fresh parsley and serve maybe even with a lemon wedge
